These Garlic Roasted Sweet Potatoes are one of my favorite side dishes. They are delicious paired with just about anything. Soft on the inside and caramelized on the outside, they are real crowd pleaser and even freeze well if you want to make a double batch ahead of time and freeze some for later!
4 medium Sweet Potatoes, peeled and cut into 2” chunks (about 2 1/4 pounds)
2 medium sweet Vidalia Onions, rough cut
4 cloves Garlic, Minced
2 Tbs Olive Oil
Sea Salt & Fresh Ground Pepper to taste
Preheat oven to 425 degrees.
Combine all ingredients on roasting pan and toss to coat.
Bake for 30 to 35 minutes, stirring occasionally, until potatoes are tender
