    Honey, honey!


    When it comes to a sweetener, we think raw, natural honey is pretty close to being the bee's knees! Not only is it naturally sweet and delicious, but it's also anti-fungal, antibacterial and paleo.

    When honey is consumed with moderation, it reaps several health benefits:

    -Helps with allergies: It has anti-inflammatory effects, can soothe coughs and is known to reduce seasonal allergy symptoms. 

    -Provides quick energy: As a natural unprocessed sugar, being a combination of glucose and fructose, it can help give a quick boost to longer endurance exercises. 

    -Memory Booster: honey contains antioxidants that may help reduce cellular damage in the brain as we age. One study noted that consuming about 20 grams of honey per day can help provide a better short-term memory as we get older. 

    -Treats dandruff: Honey's antibacterial and antifungal properties can help heal seborrheic dermatitis and dandruff, which are often times caused by an overgrowth of fungus. 


    Now for the taste, honey is sweeter than sugar and offers a whole lot more nutritional benefit! Making it a fine choice for a sugar substitute in baking, or really anywhere where you might use sugar. 


    And how much should you use? Well, honey can be substituted for sugar in equal amounts up to one cup. One cup honey for one cup of sugar. But since honey is sweeter than sugar, when a recipe calls for more than one cup, use just 2/3 or 3/4 cup of honey more for anything over one cup.

    Guiltless Blueberry Brownies

    A new mom-friend celebrated her birthday last week, and since I knew I'd be seeing her at MOPS (Mothers of Preschoolers) on Thursday, I decided to whip her up a batch of Guiltless Brownies for her special day! I know she's a chocolatey chocolate girl, like me! The richer, the denser, the gooey-er, the better! It turned out that it rained like cats and dogs that Thursday morning keeping us both at home, and I didn't even get to see my friend that day. Super sad for her ;) but nice for my little family who enjoyed the delicious blueberry brownies all weekend long, and I have a new recipe to share with you!  Isn't life sweet like that, when you set out to do something nice for someone else, you always end up getting blessed in return, too!  (Don't worry, I'm going to make her another batch next time we get together!) :) 

    The day before MOPS, I was taking care of both boys and working from home, so didn't have time to run to the store. So I popped open my fridge, freezer and pantry to see what I had to work with. An abundance of blueberries!

    Unfortunately, I only had frozen blueberries on hand, but they still worked fine. I prefer baking with fresh blueberries and leaving the frozen ones for our smoothies. I find frozen blueberries lose their plumpness after they thaw, burst easily and also leave a lot of moisture in the baked goodies.

    I later made these brownies again with fresh blueberries, and we much preferred them that way! 

    The chocolate and fruit combination is so good, because the rich chocolate gets broken up by the fresh and light flavor of the fruit. // You can check out my Toasted Coconut & Chocolate Covered Strawberry Brownies here for another brownie with fruit recipe.  


    1/2 cup Coconut Oil (measured in solid state)

    8 oz (approx 1 1/2 cups) Dark Chocolate chopped or chips (your preferred %) 

    3/4 cup Coconut Sugar

    3 Large Organic Eggs

    1 tbsp Vanilla Extract

    1 cup Guiltless 7 Seed Flour

    1/4 tsp Sea Salt

    1 cup fresh blueberries 

    1 handful dark chocolate chips 



    1. Preheat oven to 350 degrees F. Spray an 8x8 inch (or 9x9 inch) square pan with non-stick cooking spray. 

    2. In a small sauce pan on low heat, place coconut oil and 8 oz of dark chocolate. Melt together, stirring frequently. 

    3. Once chocolate is melted, pour into a large bowl to cool slightly. Whisk in coconut sugar. 

    4. Add eggs, one at a time, whisking well after each one. Whisk in vanilla. 

    5. Add Guiltless 7 Seed Flour and Sea Salt, and whisk until well combined. 

    6. Gently fold in blueberries. 

    6. Transfer brownie batter to prepared baking dish, and spread evenly. Sprinkle handful chocolate chips on top of batter. 

    8. Bake for 40 minutes, on center rack, or until toothpick inserted into middle of brownies comes out clean or with a few crumbs attached. 

    9. Cool completely (at least 10 minutes) on a wire rack.

    10. Slice into 9 large or 16 small brownies. Garnish with additional fresh blueberries, optional. 


    *Store in an airtight container in the fridge for up to 3-4 days


    Guiltless Meatballs with Kale, Bacon, Garlic & Onion

    We have a new baby in the family! Our cousin, Diana gave birth to a beautiful  baby boy earlier this week. Diana is a rockstar - an amazing mom of 2 now, junior high school teacher and the most organized meal planner I know! She feeds her family nutritious and creative meals, and she's completely gluten-free. 

    We're bringing them dinner tonight to celebrate the new baby's arrival and to help make sure momma gets to spend as much time where she belongs, loving on her new baby, and not cooking in the kitchen! We're bringing them roasted vegetables and a batch of these delicious meatballs which are popular with everyone, including toddlers (like her almost 3 year old daughter) and her ranch-loving husband, too. I sent her a text and asked if bacon was okay in their meatballs, and her husband John responded, "duh!" Lol!  If you prefer turkey bacon, it would work just fine in this recipe, and ground turkey instead of beef would work, too! 



    4 slices bacon, chopped

    1 cup kale, chopped, thick stems removed

    1/2 large red onion, diced

    2 cloves garlic, minced

    2 slices Guiltless Sandwich Bread, toasted 

    1 1/2 lbs grass-fed ground beef

    1 egg

    1 tsp sea salt

    1/2 tsp black pepper

    1 tbs oregano 



    1. Cook bacon in a skillet on medium heat until crisp. Transfer bacon to plate lined with paper towels. Drain off bacon renderings, leaving about 2 tbs in pan. 

    2. Add kale to skillet with bacon renderings, until wilted about one minute. Add onion and cook until soft, about 3-4 minutes. Add garlic to skillet and cook until soft and fragrant, about 2-3 minutes more. Transfer mixture to large mixing bowl. 

    3. Chop cooked bacon and add to bowl with onion mixture. Add ground beef to bowl. 

    4. Break toasted Guiltless Bread into large pieces then cut down into bread crumbs pieces using a large chef's knife. Add bread crumbs to bowl with meat and onion mixture. 

    5. Crack egg into bowl. Season with sea salt, pepper and oregano. 

    6. Preheat broiler. 

    7. Mix meat mixture with hands thoroughly. Form into balls and place on baking sheet coated with non-stick cooking spray. Makes about 20-21 medium-large meatballs. Leave a little room in between meatballs so they're not touching. 

    8. Broil meatballs for 6 minutes on top side. Using tongs, flip meat balls over and cook 6 more minutes on other side. 

    9. Remove from oven, cool for a few minutes and enjoy!
